Keto Cabbage Rolls


This week I'm tapping into my Polish roots and serving up some traditional pork cabbage rolls with a keto spin.  Traditionally, cabbage rolls are stuffed with rice and meat, so we'll be doing the obvious and tagging in our old faithful substitute -  cauliflower.

Makes about 12 cabbage rolls.

  • 1 head of cabbage
  • 1 head of cauliflower
  • 500g/1lb ground pork
  • 1/2 onion chopped
  • 1 cup mushroom chopped
  • 2 cloves garlic
  • 1 egg
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp marjoram

First thing you need to do before getting your roll on, is core the cabbage and get it in boiling water.  Remove about 2 inches of core (deep) and get the whole head into a pot of well salted and boiling water.  In about 20-30 minutes, the leaves of the cabbage should be easily separated, one by one. 

While the cabbage is doing it's thing, move on to the filling.  Take the head of cauliflower and rice it - whether in a food processor or by hand, get it down to rice sized granules.  Saute the onion, mushroom and garlic until cooked and onions are translucent.  In a large mixing bowl, combine the ground pork, cauli, and toss in the OMG (onion, mushroom, garlic)!  Add in the seasoning and egg and give it all a mix.  The filling is good to go.

After separating all the leaves of the cabbage, use a paring knife and trim the large vein on the larger leaves, this will make for easier rolling.  Take a cabbage leaf and place with the root side towards you.  Place a heaping spoonful of the filling in the center of the cabbage. Rolling away from you, bring the cabbage over the filling, tuck in the sides, and finish the roll nice and tight!  Once you've gotten your fill of rolling, (see what I did there?) place the rolls in a casserole dish lined with any leftover cabbage both top and bottom - this will prevent burning of the actual rolls. 

Pop in the oven for about an hour at 375F, and that's it.  You're done.  You can eat these naked, or with a keto friendly rose or mushroom sauce over top.  Enjoy!
